Mehti Rice

Normally i make methi dal with frozen methi leaves. but this one i made with fresh.



Ingredients


Rice 11/2 cups

methi leaves - 1 bunch
onion - 1 (cut length wise)
tomato - 1 small (chopped)
green chillies - 2 (cut lengthwise)
red chilly powder - 1 tsp
turmeric powder - 1 tsp
ginger garlic paste - 1 tbsp
cinnamon -1 piece
cloves - 2
mustered
oil
salt






Method

  • Cook the rice to tender.
  • Heat oil in a kadai, add mustered, cinnamon, cloves and ginger garlic paste. saute it until the raw smell goes away.
  • Now add the chopped methi leaves and saute for 3 minutes. then add onion, green chillies, saute for 2 minutes, then add tomatoes, turmeric powder, chilly powder and salt, cook for few minutes.
  • Finally add the rice and mix well.


Combination : Appalam, chips or vadagam.

Variation : You can add peas with methi leaves. also you can add roasted peanuts & cashews.

Vegetable & Egg kothu parata

I like eating kothu parata when we go out. I added soya chunks with the vegetables because my son liked it very much.

Ingredients

Frozen parata - 6
onion - 1 big chopped
tomato - 1 big chopped
egg - 2
vegetables - 1 1/2 cup (carrot, beans, peas)
soya chunks - 1 cup
green chillies - 2 finely chopped
red chilly powder - 1 tsp
coriander powder - 1 tsp
garam masala - 1 tsp
bay leaves
Fennel seeds
cordamom -1
mustard seeds
cinnamon - 3 small pieces
cloves - 2
salt
oil

Method


  • Thaw the frozen parata. cut them in to small pieces.
  • Heat oil in a kadai, add mustard seeds, Fennel seedscinnamon, cloves, cordamom, bay leaves.
  • Add onion saute untilfor a minute , then add tomatoes saute for 2 minutes.
  • Add ginger garlic paste saute until raw smell goes away.
  • Then add vegetables and soya chunks saute them for 5 minutes in medium low heat.
  • Add chilly powder, coriander powder, garam masala powder, salt, mix them well.
  • Then add the paratas mix them. Meanwhile beat the eggs.
  • Add the beaten eggs in to the parata and mix it well, cook for 3 minutes.
  • kothu parata is ready.



Combination : Onion raita.(forgot to take picture with it)

Variation : You can add chicken instead of soya chunks. you can avoid eggs.

Egg Fry

When i make fish fry for my kids & husband, i tried this for myself. it turned out good.
Ingredients
Egg - 4
fish fry masala - 1 tbsp
corn flour - 1 tsp
yogurt - 1 tsp
lemon juice - 1 tsp
salt
oil
bread crumbs

Method
  • Boil the eggs and cut them in half.
  • Mix fish fry masala, corn flour, salt, yogurt and lemon juice in to a paste.
  • Marinate the eggs with the paste. Let it stand for 15 minutes.
  • Heat little oil in a non-stick tawa.
  • Cover the eggs with bread crumbs and put it in the tawa. let them cook for 2 minutes in medium heat.
  • Turn the eggs and let them cook for another 2 minutes.


Combination : pretty much everything.

Variation : Instead of bread crumbs you can use Oats.

If you don't have fish fry masala you can use the combination of coriander powder, cumin powder, chilly powder and garam masala powder.

Tomato Kulambu (thakkaali kulambu)

In our home back in india, this is the combination for Idly. For all special days like deepavali, pongal , etc,.. my mom used to make idly and this kulambu for breakfast. whenever i make this, it brings me back lot of memories.

Ingredients

Onion - 1 (cut in cubes)
tomato- 2 (cut in cubes)
Curry leaves
red chillies - 3
Coriander powder - 2 tbsp
Shereded coconut - 2 tbsp
cinnamon - 2 small pieces
fennel seeds - 1 tsp
khus khus - 1 tsp
Cumin seeds - 1 tsp
black peppercorn - few
oil
salt


Method

  • Heat a tsp of oil and fry red chillies for 30 seconds, take it out.
  • In the same oil add 3/4 of onion, curry leaves, fennel seeds, cumin seeds, khus khus, peppercorn, cinnamon and fry them in low flame until onion turns translucent.
  • then add coriander powder and coconut fry for a minute and take them out.
  • then heat 1/2 tsp of oil and fry the 3/4 of tomatoes.
  • put everything in the mixie or blender and grind it to a smooth paste. (add water if needed)


  • heat a tsp of oil add mustered seeds, when they splutter add the remaining onions and curry leaves fry them for a minute and add the remaining tomatoes .
  • now add the paste, add water if you want and let it boil for 3 minutes.



Combination :

Idly, dosai or rice

variation:

if you add small onion or shallots the taste will be very good.
