I like eating kothu parata when we go out. I added soya chunks with the vegetables because my son liked it very much.
Ingredients
Frozen parata - 6
onion - 1 big chopped
egg - 2
vegetables - 1 1/2 cup (carrot, beans, peas)
soya chunks - 1 cup
green chillies - 2 finely chopped
red chilly powder - 1 tsp
coriander powder - 1 tsp
garam masala - 1 tsp
bay leavesFennel seeds
cordamom -1
mustard seeds
mustard seeds
cinnamon - 3 small pieces
cloves - 2
salt
oil
Method
- Thaw the frozen parata. cut them in to small pieces.
- Heat oil in a kadai, add mustard seeds, Fennel seedscinnamon, cloves, cordamom, bay leaves.
- Add onion saute untilfor a minute , then add tomatoes saute for 2 minutes.
- Add ginger garlic paste saute until raw smell goes away.
- Then add vegetables and soya chunks saute them for 5 minutes in medium low heat.
- Add chilly powder, coriander powder, garam masala powder, salt, mix them well.
- Then add the paratas mix them. Meanwhile beat the eggs.
- Add the beaten eggs in to the parata and mix it well, cook for 3 minutes.
- kothu parata is ready.
Combination : Onion raita.(forgot to take picture with it)
Variation : You can add chicken instead of soya chunks. you can avoid eggs.
